I cut this recipe in half. I used organic red potatoes and instead of bottled ranch dressing, I used my own homemade out of scratch dry ranch dressing mix mixed with a third cup each of lowfat mayonnaise, reduced fat sour cream and fat free plain yogurt. Wash then dice your potatoes and place them in a pot and cover with water. Bring to a boil and allow to cook until potatoes are tender.

- For the broccoli, just boil or steam them, season with garlic salt or just salt and pepper.
Drain water and place potatoes in a mixing bowl. About half way through I added some broccoli to it and sprinkled more of all the seasonings over top. Let it finish baking and added ranch dressing and lots of shredded cheese. Make a foil packet big enough to hold the potatoes. Add potatoes and butter to foil packet.
