  5. Cover with foil and bake about 60 minutes. Uncover and bake for 15 more minutes or until potatoes are soft.
  6. Remove from oven and sprinkle scallions on top.

This is seriously just like a broccoli cheddar twice-baked potato… but in an easy casserole form the whole family will enjoy without having to prepare each baked potato individually.
