  1. Prepare 1 lb dry lasagna noodles
  2. Make ready 15 oz ricotta cheese
  3. Take 1 large egg
  4. Make ready 4 oz shredded motzarella cheese
  5. Prepare 10 roma tomatoes, thin sliced
  6. Take 2 can spinach (drained and squeezed) 13.5oz. each
  7. Make ready 2 24 oz. jars spagetti sauce (may not use all)
  8. Prepare 1 grated parmesan for sprinkling
  9. Make ready 1 dried basil for sprinkling
  10. Make ready 12 oz shredded motzarella cheese
Steps to make Caprese Lasagna Roll-ups:
  1. Cook lasagna noodles according to package directions. Do not rinse! Just drain.. you need the stickyness of the starch to stay on the noodles to aid in rolling.
  2. Preheat oven to 375°F
  3. Using a large baking sheet.. spread a thin layer of spagetti sauce over entire sheet. Set aside.
  4. Line work surface in wax paper or parchment paper.
  5. Lay out each noodle onto paper in a single file.
  6. Spread a couple tbl. Of ricotta mix along each noodle as pictured. Its ok if u dont cover the entire thing.
  7. Lay out a few slices of tomato across the ricotta. Leaving a small space between each and leaving a small space at each end. To make for easy rolling.
  8. Break apart small pieces of spinach and sprinkle accross tomatoes.
  9. Sprinkle basil across the length of the noodle. Just a light sprinkle.
  10. Do the same with the parmesan. Really as much as you would like.
  11. Gently but firmly.. starting at one end, roll the lasagna noodle up. Not to tight or it will all push out the sides.
  12. Transfer roll to on top of prepared baking sheet.
  13. Repeat until out of ingredients.
  14. Now spoon sauce over each roll, as much as u would like. But i did a big serving spoonful on each.
  15. Now sprinkle motzarella cheeese on top of each. About a small handful. More if u like more, but itll get messy if u put to much sauce/cheese.
  16. Again take the basil and parmesan and give another light sprinkle to the top of each roll..
  17. Bake in oven for 10-15 min. Closest to heat. Just long enough to heat it up and let the cheese melt.
  18. If the ricotta is starting to ooze out.. its done! :)
  19. Transfer to serving plates. And serve!
  20. I served mine with homemade garlic bread and a nice italian side salad.
